Specialty gourmet mushroom farm growing oyster, shiitake, pioppino, king trumpet, and more
Mycel Mushrooms is a small, woman-owned gourmet mushroom farm growing a rotating lineup of specialty varieties including oyster (pink, blue, snow), shiitake, pioppino, king trumpet, chestnut, and golden enoki. We sell fresh mushrooms at local farmers markets, through the Wasatch Food Co-Op, and via a mushroom CSA (currently waitlist only). Our farm is by appointment only for direct visits. We also carry mushroom growing supplies and host pop-up events such as cultivation classes and dried mushroom craft nights. We work with restaurants, CSAs, and caterers to supply freshly harvested mushrooms.
We grow year-round indoors in controlled environments, and we rotate varieties seasonally, favoring cold-loving mushrooms in winter and tropical varieties in warmer months. Spent mushroom substrate is donated to local farms for composting rather than sent to landfill, reflecting our commitment to a circular economy. We use breathable cardboard boxes for packaging. Our mission statement commits us to a regenerative business model that reduces food waste and transforms organic byproducts into nutrient-dense mushrooms.
