Organic stone-milled heritage grain flour, cornmeal, grits, and whole berries from a Texas mill.
Barton Springs Mill is an organic stone mill specializing in heritage and landrace grain flours, cornmeal, grits, polenta, and whole berries. Founded in 2016 by James Brown, the mill operates out of a 17,000 square foot facility alongside Abby Jane Bakeshop. We sell to chefs, bakers, distillers, brewers, and home enthusiasts. Our flour lineup spans all-purpose, bread, pastry, rye, ancient, and specialty varieties, plus organic corn products and whole berries. The facility is open for tours and classes by reservation only. Learn more on their About Page.
We use two Osttiroler stone mills from Austria to grind our grains. All of our crops are grown organically, without chemicals, and we prioritize sourcing as many crops as possible from within Texas. We work with a named network of farmer partners across Texas, Oklahoma, Colorado, New Mexico, and Arizona, growing the same heirloom and landrace varieties planted in this region in the late 1800s. Specific grain varieties are matched to the farms whose land suits them best: for example, TAM105 wheat goes to Ralph Hoelscher in Miles, TX, whose land reliably produces high protein, while Aaron Vogler's land in Lamesa, TX excels with Sonora soft wheat and Danko rye.
