Flour tortillas made with heirloom wheat and real fats, no seed oils
Mesocano is a Mexican-American family-owned flour tortilla business founded by brothers Jesse and Michael Mondragon, along with co-founder Robert Silva. Jesse grew up in East Austin making tortillas with real ingredients the way his family always had, and that same idea became the foundation of the business. The line includes three flour tortilla varieties: beef tallow tortillas ("The Everyday"), grass-fed butter tortillas ("El Tejano"), and pork fat tortillas ("The Traditional"). All are made with organic, non-GMO, glyphosate-free heirloom wheat flour, with no seed oils and no folic acid. Every step from mixing to cooking to packing happens in-house, in small batches. Learn more on their About Page.
Mesocano uses organic, non-GMO, glyphosate-free heirloom wheat flour in all of its tortillas. The fats used are pasture-raised, grass-fed beef tallow; grass-fed butter; and freshly rendered pasture-raised pork fat, depending on the variety. The business does not use seed oils, folic acid, enriched flour, or fillers. All tortillas are made in small batches entirely in-house, with every step handled by the team so nothing is co-packed or outsourced.
