Family-owned grass-fed beef ranch raising Angus, Devon, and Irish Dexter cattle with no hormones, antibiotics, or steroids.
Skip Rock Ranch is a family farm founded in 2012 by brothers Scott and Lee Wilbeck, whose family has been farming and ranching in Texas since before statehood. The ranch raises grass-fed Angus, Devon, and Irish Dexter cattle in a farm-to-table model, selling beef as whole, half, and quarter steers custom-butchered to order. Ground beef and primal ground beef (a 90/10 blend with organ meat) are also available for direct purchase. The operation is rooted in a deliberate move away from feedlot production, drawing on the ranching practices of their father and grandfather. The ranch runs to the butcher several times a year, typically in May, June, July, and October. Learn more on their About Page.
All cattle are exclusively grass-fed with no added hormones, steroids, or antibiotics. The herd includes Devon bulls, Angus/Devon cross cows, and select Irish Dexter steers sourced from reputable ranches. Calves are born on the ranch; purchased steers are raised only on grass and their mother's milk before joining the herd. Cattle graze open pastures and are managed using humane, low-stress livestock handling techniques developed by animal behavior experts Temple Grandin and Bud Williams. Steers are sent to the butcher at 24 to 30 months of age and processed at Dziuk's Meat Market in Castroville, TX, where customers can specify their own custom cuts.
