Award-winning Texas Hill Country winery growing estate grapes and producing wines from a 14.5-acre vineyard in Stonewall.
Adega Vinho is a family-owned winery and vineyard in Stonewall, Texas, founded by Andrew Bilger and co-run with his brother Michael and sister-in-law Elena. The Bilger Family broke ground on their vineyard along County Road 1623 in 2016, cleared the land by hand, and had vines in the ground by spring 2017. Their estate now covers 14.5 acres and includes a full production facility, fermentation center, and a tasting room with mid-century and industrial decor. We produce both flowing blends and single-varietal wines, with the vintage and vineyard guiding each release. A food truck and a wine club round out the on-site experience, and we host tours and events by appointment throughout the year. Learn more on their About Page.
We grow Vitis vinifera on our estate using organic products and low-intervention methods. Specific practices include managed irrigation schedules, compost teas, snow pea cover crops, and the introduction of beneficial insects into the vineyard. All estate fruit is hand-tended and hand-harvested. In the winery, we follow a hands-off approach: we avoid intervening in the winemaking process unless absolutely necessary, letting the vintage and vineyard tell the story rather than producing a uniform commercial product. We are committed to passing the land forward in better condition than when we acquired it, and donate 10% of annual profits to local Texas Hill Country causes.
