Legacy Ranch is a family-owned farm raising American Wagyu beef cattle outside Eureka, Illinois. Sawyer and Abbie Cottrell started the ranch in spring 2021 after years of raising commercial Angus cattle. Their herd is primarily Akaushi, a breed of Wagyu, with genetics traceable to the first Wagyu cattle brought to the United States. The ranch maintains both a fall and spring calving herd and raises every calf from start to finish. Customers can reserve quarter, half, or whole beef shares, with cuts ranging from ground beef to filet mignon. Wagyu beef is known for its exceptional marbling, rich flavor, and tenderness.
The Cottrell family raises their American Wagyu herd with Akaushi genetics that trace back to the first Wagyu cattle imported to the U.S. They maintain a fall and spring calving cycle and raise all calves from start to finish on their own farm before harvest. The ranch markets directly to customers through beef share reservations, giving buyers a clear connection to the specific animals they are purchasing.
