Texas raw milk creamery making cave-aged and fresh cheeses, with classes and tours.
River Whey Creamery was founded by Susan Rigg, a graduate of the Culinary Institute of America, and has been producing cheese since October 2014. We make five cave-aged raw milk cheeses: Keystone, Caldera España, The Welshman, Indigo Ridge, and Whey Blue, plus a rotating lineup of fresh, seasonal cheeses. In 2016, our winter seasonal cheese St. Clements won first place in the Fresh Flavored Cheeses category at a national competition. Our cheeses are available at Whole Foods Markets and H-E-B Central Markets across Texas, Antonelli's Cheese Shop in Austin, and select local restaurants, hotels, wineries, and shops. Curbside pickup is available directly from the creamery. We also offer hands-on cheesemaking classes for beginners and advanced students, as well as monthly tours and tastings. Learn more on their About Page.
We source our raw milk from Four E Dairy, a Jersey cow operation we visit every Monday and Wednesday. Our aged cheeses are cave-aged on site. We describe our approach as going beyond farm-to-table, with a stated belief in sustainability and transparency. Our seasonal cheeses have included ingredients such as organic oranges and lemons and Texas honey sourced from Holdman Honey, a family-run bee operation in nearby Seguin, Texas.
