Shirttail Creek Farm is a family-owned regenerative farm run by Sam and Carolynn Moffett and their small team. Founded in 2017 after the Moffetts left careers in Austin to put down roots on land along Shirttail Creek, the farm produces 100% grassfed and finished beef, pasture-raised pork, pasture-raised chicken, and pastured eggs. We sell individual cuts, whole and cut-up birds, bones, offal, and curated bundles, with a Pastured Provisions Club for members who want priority access and the lowest pricing. We run Shirttail Creek Farm on regenerative principles, working to mimic a healthy ecosystem where diversity in livestock species and forage plants is favored. Our cattle are 100% grassfed and finished with no grain at any stage. We use managed intensive grazing, moving cattle daily to fresh pasture and resting ground for five to seven weeks for regrowth and manure incorporation. Each fall we seed winter grasses (oats, wheat, ryegrass), legumes (vetch, clover), and brassicas like daikon radish; in summer we plant season-appropriate grasses and legumes. Broiler chickens rotate across fresh pasture in moveable tractors, shifted daily for even manure distribution. Laying hens move weekly into new pasture in 13 large coops, and vacated ground is planted with forages for cattle to graze the following season. Pigs rotate into fresh, well-shaded wooded paddocks every few weeks. This multispecies rotation has measurably improved pasture fertility over the years.
